When Heidi's son was born, she made a conscientious effort to work out of her home. Heidi started by making crafts and selling them at shows. There were copper candleholders, stained-glass paintings and miniature replicas of homes and churches.

Then came the jelly. Heidi makes blends of jelly with fruits and peppers, including jalapenos, chipotle and some of the hottest peppers known to man, habaneros.

She'd never made jelly before, and said she went through months of trial and error before finally getting the perfect combination of sweet and heat. Selling food products is a complicated business and Heidi said the "mountains of red tape" was frustrating.

Heidi entered two kinds of jelly into competition at the Space Coast Fair, both varieties took first-place awards. Heidi travels to craft shows, giving out samples of her jelly and people always comment "It's fantastic." When sampled at a gourmet appetizer party, many found it to be "very different". "It hit the palate with extraordinary sweet-sour-hot-flavors exploding the taste buds." A few even said that the idea of pepper in jelly sounds terrible at first, then they tried it. "it's really good, not so spicy it overpowers any of the fruit flavors"

While all pepper jellies may be used in traditional ways (such as bagels and toast), Heidi encourages using the jellies as sauces on all types of meat and even ice cream.

Heidi credits her husband and son, family and friends with helping her achieve success. The jellies are available at many gourmet stores in Florida, you can also place an order from our website.
